The beans, beige in color at this point, are covered with water and left to soak in a fermentation tank for twelve to fourteen hours. This method not only preserves the beans’ inherent sweet flavors but also prevents any sour or overly bitter notes from developing.


Following the wet milling, we use parchment drying and moisture-controlled storage. These steps are essential for maintaining the beans’ quality and flavor profile. By controlling moisture, we avoid the development of molds or other elements that can contribute to a bitter taste.
